Shrimp Martini with Sesame Vinaigrette

4 Large Martini Glasses
1 Large Salad Bowl
1 Pot + Steamer Attachment
1 Whisk
1 Small Bowl (for dressing)
Ingredients:
2 Pounds Cooked shrimp, peeled, deveined, tails removed
3 Cups Baby greens
1 Cup Cherry tomatoes, quartered
1 Cup Heart of palm, sliced length wise, then chopped into ¼ inch segments
2 Whole Oranges, segmented
1 Bunch Fresh cilantro, for garnish
Sesame Vinaigrette:
1 Cup Shallots, diced small
¼ Cup Soy sauce
¼ Cup Rice wine vinegar
2 Tablespoons Water
1 Tablespoon Sugar
Pinch Salt
1 Teaspoon Dried mustard powder
¼ Cup Sesame oil
¼ Cup Vegetable oil
1 Tablespoon Lemon juice
Instructions:
For the vinaigrette:
COMBINE all the ingredients except oils, and whisk in a bowl until well incorporated and sugar is dissolved.
FINISH by adding oils and whisking vinaigrette together.
For the Shrimp:
POACH shrimp in 3 cups water with 3 tablespoons lemon juice (bring to boil and steam shrimp for 3 minutes).
SOAK in iced water to stop cooking.
CUT the shrimp in half on a cutting board.
TOSS hearts of palm, cherry tomatoes, orange segments and shrimp with 1 ½ - 2 cups of vinaigrette.
PLACE baby greens in chilled martini glass, topped with hearts of palm, cherry tomatoes, orange segments and shrimp.
GARNISH with a sprig of cilantro. Serve.
