Ricotta and Fruit Toast
Ingredients:
4 Slices Whole wheat toast
1 Cup Ricotta cheese (low fat)
1 Tablespoon Honey
1 Tablespoon Butter
2 Whole Apricots cut in half
4-6 Whole Strawberries
1/2 Cup Blackberries and Raspberries mixed
Instructions:
Remove the crust of the bread, add the butter and place in a toaster oven.
Place the Ricotta and honey in a small mixing bowl and blend until combined.
Place 1 tablespoon of the ricotta mixture on top of the toast.
Garnish with the fruit of your choice.
Tip: Great children's recipe. Perfect afternoon snack.
