Manchego, Watercress, and Spanish Chorizo Panini
Ingredients: (approx. 1 cup)
1 Whole wheat Ciabatta bread
2 1oz. Manchego Cheese, sliced
1 3oz. Chorizo, cut in half
1/4 Cup Watercress
1 1 oz. Cilantro mayo* (see below)
Cilantro Mayo:
2 Tablespoons Fresh lime juice
1 Clove Garlic, fresh
1/4 Cup Parmesan cheese, grated
2 Teaspoons Dijon mustard
3/4 Cup Fresh Cilantro leaves
1 Cups Light mayonnaise
1/4 Cup Water for consistency
1 Teaspoon Salt and freshly ground black pepper
3 Tablespoons White Vinegar
Instructions:
Mayo: Place all ingredients in a blender. Blend until smooth
Sandwich Preparation: Spread the cilantro mayo on both sides of the bread.
Place the Chorizo Slices, Manchego cheese, and Watercress on the bottom slice.
Place the top slice and press for 2 minutes in the Panini machine, until the sandwich is heated all the way through.
Tip: Garnish with a spring of cilantro
