Loaded Veggie Tomato Sauce

Loaded Veggie Tomato Sauce, served with penne pasta

Serves: 8-10 portions
Preparation Time: 10 minutes
Total Time: 1 hour, 10 minutes

Ingredients:

1/2 Cup   Yellow Onions, chopped

1/2 Cup   Carrots, chopped

1/2 Cup   Celery, chopped

1/2 Cup   Garlic

1/2 Cup   Leeks, chopped

1/2 Cup   Scallions, chopped

1    Can   V8 juice

1/2 Cup   Peeled Tomatoes

1/4 Cup   Sugar Substitute (Granulated preferred)

1/4 Cup   Parmesan, Reggiano cheese, grated

1/4 Cup   Fresh Basil

1    Cup   Chicken Stock (low sodium)

2    Tbsp  Extra Virgin Olive Oil

1     Lb     Penne Pasta, cooked

Step-by- Step Instructions:

1. Place the olive oil in a deep sauce pan, at high heat

2. Place all the vegetables, sauté for 3-4 minutes until vegetables are soft

3. Add the tomatoes, V8, chicken stock, basil, let simmer at mid low heat for 45 minutes to 1 hour

4. Add the Sugar substitute, place the mixture in a blender, and blend until well combined and smooth,

5. Mix the pasta with a small amount of the sauce, place it on a plate, and top with more sauce, and a touch of Parmesan cheese

6. Serve and smile
