Flat Iron steak, Passion fruit reduction and French cut potatoes Provencal
Ingredients:
4 Whole 8 oz Beef tenderloins
1/2 Cup Passion fruit
1/2 Cup Red wine
3 Tablespoon Honey
1/2 Cup Beef stock
1-Pound Fresh potatoes cut French style
1 Tablespoon Garlic, chopped
! Tablespoon Parsley, chopped
1 Bag Baby spinach
1 Each Lemon juice
2 Tablespoon Butter
Salt and pepper to taste
Instructions:
Place the steaks seasoned with salt and pepper on the grill; cook for 6 minutes each side. Set aside.
In a saucepan, at mid heat, add the passion fruit juice, red wine, stock, honey, let simmer and reduce by half, set aside.
Place the spinach lemon and butter in a high heat pan until wilted, set aside.
Place the French potatoes in a 350 degree fryer until golden brown, season the garlic and parsley.
In a large plate, place the sauce in the middle of the plate, add the spinach, place the filet and top with the French fries Provencal.
Serve Hot.
