Organic Cucumber Carpaccio with Pink Peppercorns
Description: Delicate carpaccio of cucumbers, pink peppercorns, and leekes

2 Each organic cucumbers (waxed)
2 tbls pink peppercorns
1 Cup baby parsley(shevril)
1/2 Cup leeks
2 tbls extra virgin olive oil
2 Each lemons
1 Tbls dijon mustard
1 tbls water
1/4 Cup reggiano parmesan cheese
1 Tsp minced garlic
Instructions: With a mandoline, cut circular slices, papper thin.
In a bowl, mix the lemon juice, mustard, water, olive oil and garlic until combined.
Place the cucumbers slices in the middle of the plate.
Drizzled the vinaigrette on top of the cucumbers, sprinkle a little of reggiano cheese, leeks and parsley.
